Ingredients

olive oil

red onions peeled and quartered

carrots diced
2
stalks of celery diced

yellow and red peppers cut into diamonds

cloves garlic peeled and crushed

Bisto for Roast Chicken Gravy
1 Tbsp (15 ml)
Hinds Spices Mixed Herbs
2 tsp (10 ml)
Hinds Spices Paprika

chicken thighs deboned and cut into 3

x punnets cherry tomatoes
3 cups (750 ml)
veg stock

baby potatoes halved
Instructions
Heat the oil in a casserole pot, sauté the red onions, carrots, celery and peppers for
5 minutes
. Add the garlic, Bisto for Roast Chicken Gravy, Hinds Spices Mixed Herbs and Hinds Spices Paprika and rosemary, Fry for a further
2 minutes
.
Add the chicken thighs, tomatoes, stock and potatoes and bring to a gentle simmer for
90 minutes
.
